We will need:
- 2 processed cheese
- 1 medium onion
- 3-5 potatoes
- 150 g of mushrooms
- 1 medium carrot
- 3 tablespoons of vegetable oil
- Soy sauce to taste
- Ground black pepper and bay leaf
- Parsley or dill
Onions and carrots clean, wash and cut into small cubes. Mushrooms wash and cut not very finely arbitrary shape. Peel potatoes, wash and cut into medium cubes.
In a hot frying pan with vegetable oil pour the onions with carrots, fry for 3-5 minutes, not often stirring. Then add mushrooms and fry for another 3-5 minutes.
Pour the fried vegetables and mushrooms into a saucepan, add a pinch of salt, sliced potatoes, ground black pepper, bay leaf 2 leaves, 1 liter of water and bring to a boil, reduce the heat to minimum.
Starch foam can be released from the potato, remove it with a skimmer or a small sieve.
After 10 minutes of boiling, add the processed cheese after breaking into small pieces and cook for another 5 minutes.
Turn off the fire, add chopped greens and our wonderful soup is ready.
The broth is even better
If you like soups more richly, then you should also take 2 chicken breasts, boil them in 1.5 liters of salted water with peppercorns and bay leaf. Boil should be at minimum heat so that the broth does not boil much. Foam from the broth must be removed. In 40 minutes, the breast is fully cooked, remove it, let it cool and easily break it into fibers.
Use broth for cooking, and add breast at the end of cooking.
Garlic at the end of cooking will greatly improve the flavor of this dish. If you like more sharply, then red pepper will suit the best way. In Asian tradition, this soup is cooked with oyster or fish sauce, if you want exotic, then try adding one of these sauces.
