Curried Salmon with Chard and Chickpeas

Sweet, savory, and a little spicy, this surprisingly quick recipe is so full of flavor, your family will never guess it took less than 30 minutes to throw together.

1 tbsp. honey
1 tsp. curry powder
2 tbsp. olive oil
bunch Swiss chard
pinch cayenne pepper
piece skinless salmon fillet
- Heat broiler with oven rack positioned 5 to 6 inches from the heat. Line a rimmed baking sheet with foil.
- Using a peeler, remove 4 strips of orange zest; thinly slice the zest. Squeeze 1 tablespoon orange juice into a small bowl. Stir in the honey and curry powder; set aside.
- Heat the oil in a large skillet over medium heat. Add the garlic and orange zest and cook, stirring occasionally, for 1 minute. Add the chard, chickpeas, cayenne, 1/4 teaspoon salt, and 1/4 cup water and cook, covered, stirring occasionally, until the chard is tender, 6 to 8 minutes.
- Meanwhile, arrange the salmon on the prepared baking sheet. Season with 1/4 teaspoon each salt and pepper and broil for 2 1/2 minutes. Spoon the honey mixture over the salmon and broil until the fish is opaque throughout, 2 to 3 minutes more. Serve with the chard-chickpea mixture.
