Has she mentioned recently that she would love a spiralizer or new wine glasses? There are plenty of options available online and in stores to fulfill either of those needs.
Personalizing the Gift
Ask your spouse for input.Especially if you are struggling to come up with ideas, no one will know better what your mother-in-law will appreciate than your spouse.
