Squid soup (Ojingeoguk:오징어국)
How to cook rice soup with squid
You will need
- - 1 cup rice
- - 1 onion head
- - 300 g squid
- - 1 carrot
- - 2 medium sized tomatoes
- - vegetable oil
- - salt
Squids peeled and cut into thin rings. Grate carrots on a coarse grater, chop tomatoes and onions.
Lightly saute onions and carrots in vegetable oil. Readiness can be judged by the emerging golden hue. Add chopped tomatoes to the mixture and fry over low heat for 10 minutes.
Boil rice in lightly salted water. As soon as it is ready, add the fried onions, tomatoes and carrots. Continue cooking all the ingredients, at the same time boil the squids sliced into rings.
Once the squids are ready, add them to the rice and bring the soup to a boil. Salt, pepper to taste.
