This recipe offers a modern take on this classic dessert, spinning peaches, raspberries and vanilla ice cream into a decadent frozen pie on a vanilla wafer–cookie crust.

1/4 c. butterscotch or caramel ice cream topping
2 tbsp. Stick Butter
vanilla wafer cookies
3/4 c. peach preserves
vanilla ice cream
1/2 c. raspberry pourable fruit
1/2 pt. raspberries
ripe medium peaches
1/4 c. raspberry pourable fruit
- Coat a 9-in. pie plate with nonstick spray.
- Make crust: Heat topping and butter in a bowl in microwave on medium or in a saucepan over low heat until butter melts.
- Process cookies in food processor until fine crumbs form. Add warm mixture; process until crumbs are moistened. Scrape into pie plate; press over bottom and up sides.
