1 tbsp. vegetable oil
red bell pepper
2 tsp. curry power
can light coconut milk (see Tip)
12 oz. red-skinned potatoes
5 1/2 c. baby spinach
- Heat oil in a large nonstick skillet over medium heat. Add chicken and cook, turning as needed, until lightly browned. Remove to a plate.
- Add onion, bell pepper, curry powder, and salt to skillet. Cover and cook 2 minutes. Stir in coconut milk, potatoes, then the chicken.
- Bring to a boil, reduce heat, cover skillet and simmer 20 minutes or until chicken is cooked through and potatoes are tender when pierced.
- Add spinach, a few handfuls at a time, stirring in more as it cooks down. When wilted, stir in basil and cilantro.
