Tip 2: Mint Cookies with Chocolate

Butter English Cookies


These cookies should be decorated with sugar or chocolate icing. Instead of the usual dark chocolate, try the color. It not only looks unusual, but also gives the baking a variety of flavor nuances. Finished products can be not only served for tea, but also presented as a gift.
You will need:
- 125 g butter;
- 75 g of sugar;
- 0.5 lemon;
-2 yolks;
- pinch of vanilla;
- 200 g of wheat flour;
- 50 g of colored chocolate tablets (strawberry, orange, mint);
- 50 g of white chocolate;
- 3 tbsp. spoons of cream.
Mix the softened butter with sugar, vanilla and grated lemon zest. Add the yolks and grind everything into a homogeneous mass. In portions, add the sifted flour, knead the dough. Wrap it in plastic and put it in the fridge for 1 hour.
Roll out the cooled dough on a floured board. Cut out the shapes. Bake them in the oven, preheated to 200oC. Remove cookies from the baking sheet and cool.Spread chocolate tablets of different colors into saucepans or bowls and melt them over low heat or in a microwave oven, adding cream to each container.
Proceed to decorating With a teaspoon, coat the surface of the pastry with chocolate. Choose a shade at will - for example, Christmas trees can be made green by putting mint chocolate on them. Let the glaze frost and then put melted white chocolate into the pastry syringe and apply random strokes on top of the colored glaze. Additionally, products can be decorated with sugar beads.

Soft cottage cheese cookies


Butter biscuits from cottage cheese can be served for breakfast or snack. It turns out not only tasty, but also very nutritious.
You will need:
- 200 g of cottage cheese;
- 200 g thick sour cream;
- 200 g of wheat flour;
- 2 eggs;
- pinch of vanilla;
- 0.5 cup of sugar;
- 0.5 tsp of soda;
- icing sugar for dressing.
Mash cottage cheese with sugar and vanilla, add soda, beaten eggs and pre-sifted wheat flour. Knead the neat dough, collect it in a ball, wrap with cling film and put in the refrigerator for half an hour.
Roll out the dough on a board sprinkled with flour.The seam should not be too thin. Cut the figures with a metal notch, spread them on a baking sheet, greased with oil. Bake cookies in the oven, preheated to 180 ° C, until golden brown. Remove the products from the pan, cool on the wire rack. Sprinkle powdered sugar before serving.
