Homemade Chocolate Ice Cream Recipe - Egg less - No machine by (HUMA IN THE KITCHEN)

Tip 4: Crunchy Chocolate Ice Cream

You will need
  • - milk (100 ml);
  • - powdered sugar (100 g);
  • - cream of 35% fat content (300 ml);
  • - Egg yolks (4pcs.);
  • - dry milk (1 tbsp. spoon);
  • - dark chocolate (100 g);
  • - vanilla (on the tip of a knife).
Instruction
Pour 100 ml of milk into a small saucepan, add 1 tbsp. a spoonful of powdered milk, a pinch of vanilla and 80 g of dark chocolate broken into pieces. Put the saucepan on a slow fire, bring the milk to a boil, remove from the heat and cool the milk-chocolate mixture to 40 degrees.
While the milk is cooling down, beat 4 cooled egg yolks together with 50 g of powdered sugar using a mixer or blender to a stable foam state. Then add cooled milk to the yolks - this should be done in small portions, while stirring constantly.
Place the bowl with the prepared mixture in a water bath and cook until it thickens (about 10-15 minutes). The thickened yolk-milk mixture must be quickly cooled - to do this, remove the bowl from the water bath and immediately place it for a few seconds in a deep container with ice water.For further cooling, remove the mixture in the refrigerator for about 10-15 minutes.
While the yolk-milk mixture cools, whip the cream with the remaining part of the powdered sugar until a fluffy, strong foam appears. The cooled yolk-milk mixture is mixed with whipped cream.
Preparation for chocolate ice cream pour into a plastic container, tightly close the lid and remove in the freezer for 4 hours. In order for the process of freezing ice cream to occur evenly, the first 2 hours should be stirred periodically (a total of about 6-7 times).
Grate the remaining chocolate and sprinkle it on the finished ice cream.
