What Did You Have for Breakfast?
this recipe, shown right.)
It's easy to get in a rut for breakfast. We'll get into a cereal habit every once in a while and go through a couple of boxes every week. Winters mean oatmeal; Sundays, donuts or croissants. As you can see, we're pretty carb-heavy for breakfast, falling into the usual patterns. I try to serve some fruit and include something with some protein, whether it's nuts or a nut-butter, an egg, some deli meat, cheese or yogurt. I like the idea of hard-cooking some eggs to keep in the fridge for a quick breakfast; I think I read that they'll be good for about 5 days. One of my favorite variations is a bagel with almond butter or cream cheese and sliced strawberries. I also like cheese and apple butter or cream cheese with sliced nuts and dried cranberries or raisins.
